Costco Mushroom, Veggie, Chickpea Stew

Inspired by Lan Lam’s YouTube video - For Better Browned Meat and Veggies, Just Add Water | Techniquely With Lan Lam

Inspired by Vegan Richa’s - Mushroom Chickpea Soup with Veggies and Greens

Start by Instant Potting 1lb. of chickpeas covered in 1-2 inches of water for 40 minutes

Sautee carrots in nonstick pan covered in water on high

Sautee diced onion and garlic in water on high, stir occasionally as liquid reduces

Once liquid is cooked off reduce heat to medium, add small amount of oil

Cook until jammy

Blend in Vitamix with chicken bouillon, large scoop of chickpeas, nob of butter

Sautee mushrooms in water and chicken bouillon on high

Cook down and reduce heat to medium-high, small glug of olive oil

Normandy vegetables on stovetop pan, covered in boiling water from kettle

Bring to a boil, cover and heat until vegetables are still firm

Add Normandy vegetables, mushrooms, and blender mixture to Instant Pot

Add additional bouillon and water as necessary

Microplane zest 1 lemon over the top

Add the juice of one lemon

Add black pepper

Mix and enjoy
