Costco Power Greens not Curry not Congee

Eat more vegetables. More satisfying to me than a typical cold salad when it’s cool outside, but I am eating leafy greens. Win.

Recipe is two main components, so reddish text will be for “green” sauce, white text for quinoa.

Get a kettle boiling. Near full.

Mise en place - dice onion, carrot, celery. I did 1 onion, two large carrots, 3 celery stalks. Zest 1 lemon.

1 cup of quinoa

Tablespoon of chicken or beef bouillon into 2 cups of boiling/hot water from the kettle.

Large heavy bottom stainless steel pan, add your diced veggies, red pepper flakes, a tablespoon or two of olive oil, a few cherry tomatoes and the chicken bouillon. Cover it. Let this boil until the liquid is nearly gone, then turn your heat down to medium-high, uncover, and stir with a rubber spatula until browned/caramelized. Slide lemon in half and juice by hand over a small fine mesh sieve to catch the seeds. Turn off the heat.

Add quinoa to a stainless steel pan, turn heat to medium high.

1 light tablespoon of chicken bouillon into 3 cups of water.

Gently flip the quinoa as you begin to smell a “toasty smell”

After a few minutes, add the chicken bouillon carefully, bring to a boil then cover cover, set heat to simmer, set a 15 minute timer.

Add greens until pan is full, grate 4 cloves of garlic, add 2 cups water, heat on high and cover again. Cook until greens are wilted and you have room to add more. Add more. Cook down.

Whenever 15 minute timer goes off, turn heat off.

Use the rubber spatula to transfer into a blender. Add 1 can of shaken coconut milk. Add lemon zest. Add 1 cup of almond milk. Add 1 cup of water.

Blend starting from low and revving up to high, let it blend for 30-60 seconds until the liquid is relatively homogeneous. Grab a small spoon and taste it. Salt, fat, acid, heat. Does it need anything? I’m calling this “green”.

Serve the quinoa in a bowl, cover in extra green. Enjoy with a spoon.

How could this be better? I feel it’s delicious but I also like everything, so I am a relatively low bar.

How could this be better, and definitely how could I make the presentation more beautiful?
